WREXHAM'S Ty Pawb food court has welcomed a new business - serving up some Texan treats.

Roly's Smokehouse will be cooking up a range of smoked meats, slow cooked for 18 hours or so in an American smoke oven.

Dishes at the venue, described as 'a little bit of Texas in Wales', range from the 'smoked sausage po' boy' to a 'golden mac 'n' cheese burger', with sides including skin on fries and BBQ beans.

The business is the brainchild of chef Roly Thomas, from Mynydd Isa, who spent part of his childhood living in Texas.

Roly runs St Asaph-based Ffres Catering, which provides outside catering and also runs the cafe and conference catering facilities at the OpTIC Centre in St Asaph. 

He said: "I lived in Houston, Texas, for eight years when I was a kid. At weekends we used to go to friends' ranches and have smoked barbecues so it's always stayed with me.

"One day I said to my wife Agnieszka that I missed smokehouse food and she said why don't you try making it over here.

"We've got friends in Houston and they gave us  their 'ma's secret recipes'. It's all pretty authentic. 

"We're really pleased to be at Ty Pawb. The people who run it have been really welcoming and the other vendors have been really supportive.

"There's a lovely atmosphere here."

 

Ty Pawb is based on Market Street in Wrexham. Roly's Smokehouse is open Monday through to Saturday from 11am-4pm.
