A TRADITIONAL Wrexham fishmonger aims to stay one jump ahead of the competition – by selling kangaroo meat.
Cuts from the Australian marsupials are already proving a bit hit with customers because of their delicately gamey taste
But Tim’s for Fish, based at Wrexham’s Eagles Meadow shopping centre, is not stopping there.
He’s also stocking other big game meat like zebra, crocodile, kudu, ostrich and springbok.
Tim hit the headlines recently when it was revealed that he was the favourite fishmonger of the world’s biggest rock band, U2.
The Irish supergroup sent an SOS for salmon and shellfish while they were staying at a hotel in Mid-Wales and Tim duly obliged with a fresh supply.
Not one to rest on his laurels, the 49-year-old from Llangollen moved to St George’s Crescent in Eagles Meadow in the New Year.
He wants to diversify still further hoping he can sell more local home-made produce which can give his fish and game shop a more delicatessen-style flavour.
Tim had a good grounding, learning his trade by managing a fishmongers in Birkenhead for nine years prior to opening his first shop in Mold in 1988 and then at Wrexham’s Butchers Market in 1991, which have now closed and seen Tim move to Eagles Meadow.
He said: “We’ve sold quite a bit, it’s going well. People want to try something different. A gentleman came in this week wanting to try ostrich.
“I still do all the traditional stuff of course, but people have been on holidays to places like Africa and are more adventurous now in what they want to eat and what they cook.
The father-of-three sources his wide range of fish from all over the world, from the warmer seas of the Caribbean to the nearby shores of Anglesey, although 90 per cent of his stock comes from British fisherman.
In his quest to offer the freshest produce he can Tim already uses game meat from the Myddleton Estate at Chirk and has plans to sell sausages from an award-winning producer in Flintshire.
