Chef's tribute to Flintshire gran's war effort on show

A TOP chef has paid tribute to his late grandmother’s wartime efforts on a prime-time TV show.

David Kelman, who has been competing in the latest series of the Great British Menu, created a dish remembering Nancy Jones, 92, from Flint.

Mrs Jones spent much of the Second World War being bussed from her home to work in the top secret munitions factory in Rhydymwyn.

On last night’s show, Mr Kelman, originally from Denbighshire, served his main course on a dish engraved in memory of his grandmother and others who worked at the factory.

He said: “My gran went to work at Rhydmwyn munitions factory during the day and she always had interesting tales about it.

“My gran was always a massive supporter of mine through my whole career and a few weeks prior to me going on to the Great British Menu, she passed away.

“In a way I wanted to pay respect to her to show what she made of her life.”

During the series, the chefs were asked to honour the thousands of men and women who fought for our freedom on D-Day, which took place 70 years ago today.

Mr Kelman said he wanted to create dishes all about remembrance, not only of military people, but civilians who went through the war as well.

But yesterday’s dish was specifically about the Rhydymwyn factory and his late grandmother.

Mr Kelman said: “The whole design of the dish is in the shape of an artillery shell with Rhydymwyn on it and there is a whole story about my gran. I also used an ingredient that she really liked: banana.”

His dish, called End of Rationing,  comprised a chicken and banana ballotine, quail egg bhaji, spiced potatoes, roasted cherry tomatoes, carrot puree and chicken jus.

Mr Kelman said: “It has been amazing. It’s a fantastic project to do.

“It is really hard work, there are three cameras around you and you are in an alien kitchen, but it was a really valuable experience.”

Mr Kelman is the executive head chef at Gloucestershire’s only five-star hotel, Ellenborough Park.

He has secured three AA rosettes and has won silver and bronze at the 2012 Culinary Olympic.

He has also cooked for the Royal Family and the Prime Minister on several occasions.
